Mole (Spanish pronunciation: [ˈmole]) (Mexican Spanish, from Nahuatl mulli or molli, "sauce" or "concoction") is the generic name for a number of sauces used in Mexican cuisine, as well as for dishes based on these sauces. Outside of Mexico, it often refers to a specific sauce which is known in Spanish by the more specific name mole poblano. In contemporary Mexico, the term is used for a number of sauces, some quite dissimilar to one another, including black, red, yellow, colorado, green, almendra, and pipián. The sauce is most popular in the central and southern regions of the country with those from Puebla and Oaxaca the best known, but 60% of the mole eaten in the country comes from San Pedro Atocpan near Mexico City. The popularity of the sauce, especially at major celebrations, is such that 99% of all Mexicans have tried at least one version of it. This is my favorite Mexican dish!!!!


モーレ(スペイン語の発音は [ˈmole] メキシコ、スペイン語でソースを意味するmulli、molli が由来)はメキシコ料理のソース総称として使われてきたもので、料理の基本になるのよ。









1/2 cup of Doña Maria Mole

1/2 piece of Chocolate Ibarra Chocolate round

Vegetable Oil (about 3 tablespoons) Plenty

Chicken broth (enough to make it into thick liquid)


Doña Maria Mole(写真にあるソースの名前):1/2カップ






① In a bowl, add the mole and the chocolate. Add some of the chicken broth (from the chicken soup) to help dissolve it. -It doesn’t matter how much 🙂

② Keep stirring until it has all dissolved into liquid.

③ In a deep skillet, add vegetable oil under low/medium heat. (make sure there is enough oil to cover the bottom of the frying pan).

④ Once oil is warm, add the contents from the bowl into the pan.

⑤ Let it boil, then reduce to a simmer.

⑥ Eat and enjoy it on top of white rice, mexican rice, or chicken !



① ボウルにモーレソースとチョコレートを入れ、(チキンスープから作った)チキンブロスを加え溶かす。

② 滑らかになるまで沸かす。

③ 深めのフライパンに植物油をひき中火で温める。(フライパンの大きさによって油の量は変えてね)

④ 油が温まったらフライパンに②のボウルの中身を入れる。

⑤ グツグツと煮詰める。

⑥ 白米やメキシカンライス、チキンの上に乗せて食べてみて!














Again, this is my favorite dish my mother makes when I return from the states. I was born in Los Angeles, but my father and mother are both from Mexico, so these dishes have continued to be cooked. I cooked this dish in vietnam and it wasn’t the crowd favorite, but it is nice to try something different. I’m not sure if I can get the ingredients in Japan…if you know, please let me know! Thinking about this dish makes me excited about going home!
