ここでの way は「方法」ではなく、「道・進路・目的地までのルート」です。on には表面への接触だけでなく、「線やルートの上にいる」という感覚があります。
そのため、on the way＝目的地へ続くルート上にとなり、「向かう途中」「途中で」という意味になります。

目的地が会話の中ですでに分かっている場合や、途中の行動を伝える場合は、この形だけで使えます。
